We believe in eating a plant-forward diet with organic whole foods. When we revolve our diet around a diverse array of plants we are able to fuel our body with the vitamins and phytonutrients it needs to improve our health, and help our environment. Here at Nook we do not advocate for a certain way to eat. We offer an inclusive menu with both plant and animal protein options that are complimented with plant-forward bases made with nutrient-dense whole ingredients. We source our animal protein from local farms that are antibiotic-free & hormone-free. All products are free from gluten, dairy, refined sugar, preservatives, and inflammatory oils.
Plant Diversity = Nutrient Diversity.
Every gorgeous hue of colour from plants tells a story. It tells you which vitamins, minerals, and healthy nutrients it is likely to contain because each colour reflects a different set of phytonutrients. When you eat the full spectrum of colours from plants you are ensuring that your body is receiving the full spectrum of phytonutrients therefore supporting your digestive system, immune system, and all around health. For example yellow & orange vegetables aid our immune system and promote eye health. Green vegetables help detoxify the body and restore energy. The more our plates reflect the rainbow the more benefits we will receive from them.
We believe that food is meant to be enjoyed and not a constant source of stress. The food we give our body contains information. It interacts with our biology with every single bite. The same number of calories from different food groups have a very different effects on our biology. The makeup of our microbiome (the living bacteria found in our gut) determines how our body absorbs the food we eat, how many calories we absorb. What matters is the quality of food we eat, not the quantity. When we flood our system with vibrant, nutrient-dense, whole food plant based ingredients our body knows what to do with it and uses the fuel to thrive from the inside out.
Nook was built around the pillars of eating a diverse plant-based diet but most importantly it was built around eating what makes us happy. When we sit down and enjoy our food - Our bodies react more positively to it. Humans have to eat every single day, and food has become a source of stress and negativity in so many ways. We are here to help fix that. We want each and every single bite to bring a small moment of happiness through the flavours, the diversity, and the reaction it creates within your body. We create our food to nourish both your body and your mind because one can not work optimally without the other.
Minimizing impact on our Beautiful Planet.
Here at Nook we strive to have as small an environmental footprint as possible and are constantly looking for ways to improve. By supporting our local, certified organic, farmers we minimize the transportation cost of our ingredients. Our menu reflects what our farmers have in abundance, we order only what we need and due to our rotating menu we have less than 2% food waste.
Bottle Return Program: Our bottle return program helps us to create a closed-loop system where we can wash and reuse our glassware an infinite number of times with no waste. All of our glassware can be returned for a $0.25 credit. This credit goes towards your future nook meals and juices. All we ask is that you rinse out your bottles and jars as best as you can before returning them to our location at 990 Bishop St N or leaving your bottles & jars on your doorstep for pickup.
Food Waste: We are able to minimize the food waste produced in our kitchen. Any food waste we have is picked up by an organic local farmer who feeds it to his live stock!
